Greek moussaka is a comforting oven-baked dish made with tender eggplant, a fragrant meat sauce and a thick layer of creamy béchamel.
The combination of cinnamon, tomato, beef and roasted vegetables gives this dish its characteristic Mediterranean flavor. It is ideal for a family dinner because it can be assembled in advance and baked shortly before serving.

Ingredients
For the eggplant
- 3 large eggplants
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
For the meat sauce
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 750 g ground beef
- 2 tablespoons tomato paste
- 400 g canned chopped tomatoes
- 120 ml red wine or beef stock
- 1 teaspoon dried oregano
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground allspice
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 bay leaf
- 2 tablespoons chopped fresh parsley
For the béchamel
- 75 g butter
- 75 g all-purpose flour
- 750 ml whole milk, warmed
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 egg yolks
- 75 g finely grated Parmesan or kefalotyri cheese
For assembling
- 50 g grated cheese
- Olive oil for the baking dish
Instructions
Prepare the eggplant
- Preheat the oven to 220°C / 425°F.
- Cut the eggplants lengthwise into slices approximately 1 cm thick.
- Arrange them on baking trays lined with baking paper.
- Brush both sides lightly with olive oil and season with salt and pepper.
- Roast for 20–25 minutes, turning once, until tender and lightly golden.
- Remove from the oven and reduce the temperature to 190°C / 375°F.
Prepare the meat sauce
- Heat two tablespoons of olive oil in a large frying pan.
- Add the chopped onion and cook for five minutes until softened.
- Add the garlic and cook for 30 seconds.
- Add the ground beef and cook until browned, breaking it into small pieces.
- Stir in the tomato paste and cook for one minute.
- Add the chopped tomatoes, wine or stock, oregano, cinnamon, allspice, salt, pepper and bay leaf.
- Simmer uncovered for 25–30 minutes until the sauce becomes thick.
- Remove the bay leaf and stir in the parsley.
Prepare the béchamel
- Melt the butter in a saucepan over medium heat.
- Add the flour and whisk continuously for approximately two minutes.
- Gradually pour in the warm milk while whisking.
- Continue cooking until the sauce becomes thick and smooth.
- Remove from the heat and season with nutmeg, salt and pepper.
- Allow it to cool for five minutes.
- Whisk in the egg yolks and grated cheese.
Assemble the moussaka
- Lightly grease a deep baking dish.
- Arrange half of the roasted eggplant slices over the base.
- Spread the beef sauce evenly over the eggplant.
- Cover with the remaining eggplant.
- Pour the béchamel over the top and smooth it evenly.
- Sprinkle with the remaining grated cheese.
- Bake for 40–45 minutes until golden brown.
- Allow the moussaka to rest for at least 20 minutes before slicing.

Roasting the eggplant instead of frying it reduces the amount of oil and makes the dish easier to assemble.
The meat sauce should be thick rather than watery. Excess liquid can prevent the moussaka from holding its shape.
Letting the finished dish rest before cutting is essential for clean, attractive portions.
Storage
Refrigerate in a covered container for up to three days.
Reheat individual portions in the oven or microwave. The assembled moussaka can also be frozen after baking for up to two months.
